What's new in Vail and Beaver Creek

While it’s hard to improve upon perfection, Vail and Beaver Creek have some new restaurants and retail shops that we can’t wait to sample this season. Here’s what’s on our radar.

New in Vail and Beaver Creek Restaurants

El Segundo

From the owners of Montauk Seafood Grill in Lionshead comes El Segundo in Vail Village. El Segundo is a high-energy, semi-traditional taqueria & tequila bar, that just opened in the middle of Vail Village. This fast-paced hotspot boasts Mexican favorites along with Asian fusion flare. With over 100 tequilas and sophisticated yet casual bites, this is a great spot for drinks with friends or an eclectic and easy night out with family.

Root and Flower

This postage stamp-sized wine bar favorite is moving into a much larger space this month. Very soon, Root and Flower fans will no longer have to press their noses against the glass to hoping to experience their irreverent wine list favorites like the “unappreciated and misunderstood” or “graceful and elegant” pours. They are taking over a posh spot three times their current size over on Bridge Street. With expanded seating comes an expansive kitchen and promises of a menu that goes beyond the charcuterie plates and small bites. We can’t wait to see what their creative culinary team churns out this winter.

Two Arrows Coffee

With Root and Flower relocating to Bridge Street, the pop-up artisan coffee shop, Two Arrows Coffee, can settle into their space permanently. We’re thrilled with this news as it’s our favorite spot for waking up and winding down.

Blue Plate Bistro

There’s a new way to dine at The Blue Plate in Avon. Owners Adam and Elli Roustom refurbished two vintage gondolas with European chalet inspired interiors, then nestled them into the restaurant’s patio. A personal butler attends to up to four guests in each gondola, aptly named Hansel and Gretel. Guests can choose from the chef’s tasting menu or the traditional alpine menu. Take home a polaroid group photo courtesy of Blue Plate to commemorate the evening. It’s a unique setting for a romantic rendezvous or an evening to remember with friends. And, of course, the little ones certainly get a big thrill out of dining in them! Remember to reserve in advance for this special dining option.

Shopping in Beaver Creek

Siempra Viva in Beaver Creek

Beaver Creek shoppers have some new spots in which to swipe their credit cards. Los Libros bookstore and its sister boutique, Siempra Viva clothing store, are the latest Beaver Creek Ski Village additions. Los Libros offers thoughtfully curated book selections, an organic coffee + tea bar along with daily story time at 10:30 am throughout the ski season. Siempra Viva means “always alive” and its vibrant collection of clothing for women, men and kids certainly live up to its festive name.

New snowmaking expansion

It’s been an epic early season thanks to Vail’s snowmaking expansion. Opening day guests were treated to access to Mid Vail as well as more predictable early season top-to-bottom conditions, plus increased intermediate and beginner trail access.  With over 500 acres of snowmaking and 421 new snowguns, this has been the largest snowmaking expansion project in North America. For Vail, it’s one of the most significant capital investments in its history. And the expansion is just getting started. This is a multi-phase project with Vail significantly raising the bar on early season conditions.

Beaver Creek’s Red Buffalo Park also expanded its snowmaking, renovated its Children’s Ski School and remodeled the Village. Don’t worry! Those warm chocolate chip cookies at the end of the ski day remain the same - mouthwatering!
