Savor the Season: What's New on the Dining Scene in Breckenridge, Steamboat, Vail & Beaver Creek

Colorado’s mountain towns continue to elevate the dining experience and this season brings plenty to savor in Breckenridge, Steamboat, and the Vail Valley. From locally-inspired kitchens, to restaurants earning prestigious accolades, to laid-back yet inventive eateries, each destination is carving out its own culinary niche. There’s never been a better time to explore what’s new on the menu in the mountains.


Vail & Beaver Creek

The Vail Valley continues to shine on Colorado’s culinary stage, blending iconic favorites with fresh new concepts. Sweet Basil and Osaki’s in Vail, along with Mirabelle and Splendido at the Chateau in Beaver Creek, once again earned a spot on the prestigious Michelin Guide Colorado Recommended List for 2025. Several valley favorites—including Tavernetta, Swiss Chalet, Makoto, Hooked, Fattoria, and Wyld—were also honored with Wine Spectator Awards. Adding to the excitement, chef Riley Romanin debuted R Farmers’ Market & Kitchen in Avon, a gourmet butcher, market and patisserie, while chef Jesús Del Toro introduced Del Toro in Vail, showcasing bold, seafood-forward flavors rooted in his Mazatlán heritage.


Steamboat

Steamboat’s dining scene is equally dynamic, with longtime spaces reimagined into exciting new destinations. The former Mahogany Ridge is now home to 5th Street Kitchen, offering both burger classics and elevated plates like Colorado lamb chops. Three Peaks Grill has transformed into The Lounge | E3 Kitchen + Social Club, bringing a lively atmosphere with steaks and a raw bar, while the old Carl’s Tavern space has become Cypress, a comfort-food haven “where slow-country fare meets high-country vibes.” Steamboat also celebrated recognition from Wine Spectator, with Primrose, Café Diva, and Harwig’s once again honored for their outstanding wine programs.


Breckenridge

In Breckenridge, a wave of new arrivals is adding fresh energy to Main Street and beyond. Baretto 1931 has quickly become a favorite coffee spot, while The Carlin and Tavern Underground have been receiving rave reviews since opening. Legends is making its mark with a steakhouse experience infused with authentic Italian flavors and prohibition-era cocktails. Meanwhile, the Shifty Lifty Gondola Bar embraces Breckenridge’s vintage ski culture with playful throwback fare and the promise of grab-and-go breakfasts for skiers this winter. Alongside these newcomers, Briar Rose Chophouse & Saloon and Hearthstone once again earned Wine Spectator Awards, continuing their long tradition of excellence.
